Your car will start to overheat, plain and simple. That temperature gauge will spike. If you see that, pull over and turn off the engine before you cook it. It's not something to ignore. The repair bill for a blown head gasket or worse is way more than just fixing a leaky hose. Check your coolant level every couple of weeks when the engine is cold.
