Oh, I've been there. It's almost always the cable. Those cheap gas station cables are useless for CarPlay. Swap it out for a good one you know works. If that doesn't do it, just turn your car off, get out, lock it, and wait a minute. It sounds silly, but letting the car's computer fully reset fixes it nine times out of ten.
