
The WMF Fusiontec Aromatic lid is designed to gently stew foods, concentrating flavors and preserving nutrients through steam condensation. Here's a guide to using it effectively:
How it Works: After browning your food and adding a small amount of liquid (water, stock, or broth), place the Aromatic lid on the pot. The liquid steams, condenses on the lid's cool underside, and drips back onto the food.
Filling the Lid: Fill the lid no more than halfway with ice or cold water. The recommended amounts vary depending on the lid's diameter:
Temperature Control: Start by searing your food over a higher heat. Once you've deglazed the pot with liquid, reduce the heat to low. The goal is to maintain a consistent temperature of around 80°C inside the pot. Avoid boiling the liquid; a gentle amount of steam should be visible before you put the lid on.
