Releasing the clutch during steady driving won't stall the car, and you don't need to press the clutch when accelerating by stepping on the throttle. Generally, you only need to press the clutch in the following situations: When starting the car: Quickly press the clutch and then release it to the semi-engaged state. When shifting gears: Operate the clutch pedal by pressing it quickly and releasing it immediately, avoiding the semi-engaged state, as this will accelerate clutch wear.
