I also had a hard time finding the Bluetooth settings in my CS75 before. Actually, it's right in the main menu of the central control screen - just swipe the screen to the right with your finger and tap on the Bluetooth icon when you find it. After turning it on, remember to set the car system to discoverable mode. Then search for CS75's car Bluetooth on your phone and connect, the default pairing code is usually 0000 or 1234.
