I've driven my friend's 5.0L Mustang GT a few times, and the acceleration is absolutely insane! Officially it claims 0-100km/h in about 4.6 seconds, but real-world performance depends on many factors. Last year when I drove the manual version, I tried several full-throttle launches - my best time on asphalt was 4.9 seconds, and interestingly it was slightly faster with cold tires in winter. The 10-speed automatic version is even more brutal, easily hitting 4.3 seconds in launch control mode. I recommend using Sport mode with traction control, and upgrading to summer performance tires as the stock ones tend to slip. Also, the V8 engine shows noticeable heat soak - after 2-3 consecutive launches, it needs a cooldown period.
