Last time my Baojun 730 had a sudden temperature spike which scared me - turned out the fan wasn't working because the motor burned out. Also, there was significant coolant leakage causing low levels in the radiator. Sometimes the thermostat gets stuck closed, preventing water circulation for cooling. A broken water pump stopping coolant flow is another culprit. Radiator clogged with dust or debris is common too. A leaking cylinder head gasket letting gas into the system makes it run hotter. You must pull over immediately, turn off the engine, and activate hazard lights - never keep driving as it'll cause severe engine damage. I've tried topping up coolant as emergency measure, but best to get professional comprehensive inspection at a repair shop.
