I've been driving the Touareg for two years, and the design of the rear wiper is indeed a bit hidden! Look to the left of the steering wheel at the lever that controls the front and rear wipers. There's a rotatable knob at the end. Turning it clockwise once activates a single swipe of the rear wiper, and turning it all the way clockwise triggers rear washer fluid + continuous wiping. To turn it off completely, just twist it counterclockwise back to its original position—at this point, the marker line on the knob should align with the 'OFF' position. By the way, the automatic mode is especially handy in summer; it wipes automatically when rain is detected. Just remember to turn it off when washing the car, or the wipers might move unexpectedly.

Last time when teaching my wife how to use the car, we encountered this issue too. The rear wiper switch of the Touareg is hidden on the front wiper lever: the knob at the top of the left-hand stalk controls the rear window. Turning it counterclockwise once activates wiping without washing, and turning it all the way down activates washing. To turn it off, just twist it clockwise back to the middle until you hear a click, similar to the feel of adjusting a volume knob. Remember to turn it off before winter snowfalls, otherwise, the wiper frozen to the glass may burn out the motor if forced to start.
