Having driven the Volkswagen Tayron for over two years, I've got some experience with turning off the AC. There's a prominent round knob on the AC control panel - that's the fan speed adjustment. Turn it counterclockwise to the bottom to shut off the airflow. You'll need to separately press the AC button with snowflake icon to turn off cooling. In summer, I recommend turning off the AC first to let the compressor rest, then shut off the fan after a few minutes - this helps prevent mold in the AC ducts. If that's too much hassle, just say 'Hello Volkswagen, turn off the AC', though the voice recognition can be glitchy sometimes. Also note that some natural airflow might still come through the vents after turning off the AC - that's normal, just turn on the recirculation mode to fix it.
