When the oil temperature is around 100 degrees, white bubbles appear on the oil surface, with no sound or blue smoke. Low oil temperature (30-40% heat) shows a calm oil surface with a few bubbles. At around 150 degrees, the oil surface starts to ripple slightly with faint blue smoke rising. Medium oil temperature (50-60% heat) has mostly disappeared bubbles and produces a sound when stirred. At approximately 200 degrees, the oil surface's movement becomes calm again, with blue smoke rising vigorously. Around 257 degrees, dense and rapid smoke appears with scorching heat, suitable only for stir-frying dishes.
