Good knife skills and attention to detail. Passion for learning, passion for cooking.  Someone who leaves ego out of the workplace, is ready to support others and to be supported by their team. A person who takes instruction and executes direction faithfully.  Clean and fastidious to a fault. You will have to carry heavy things (30+ pounds) Familiarity with Malaysian or southeast asian flavors a big plus. Wok skills a big, big plus.
