The night pitmaster position is one of the most important positions at our restaurant. You will be in charge of our two 1,000 gallon smokers as well as a good-sized prep list. Must have prep experience, solid knife skills, and a lot of self motivation as you will be working alone for a large part of the shift. This is a full-time position and we need someone that can work FIVE consecutive nights a week. Ideally, if hired you would work a week at the 4am-12pm shift, a week during the day, and then transition to the night shift from 6:30p-3a during your third week. REQUIREMENTS FOR ALL APPLICANTS: - Must be able to work nights (6:30pm - 3am) - Must be able to read, write and speak fluent English. - Must be able to work flexible hours, including weekends, nights, and certain holidays. - Must be able to lift a minimum of 70 lbs. - Must be able to bend, stoop, reach above your head and do repetitive hand movements, i.e. chopping, cutting, walking, lifting. - Required to wear proper attire. __________________________________________________________________________________________________ Assumes 100% responsibility for the quality, food safety/sanitation, and timeliness of dishes served Responsible for knowing and understanding menu items, safety guidelines, sanitation guidelines, and will be required to obtain Food Handlers Certification. Can work with necessary restaurant equipment safely and with care Shows up when scheduled Maintains a clean and sanitary work station and contributes to cleanliness of all parts of the kitchen to ensure smooth service and sanitation guidelines Handles, stores, and rotates all products properly in accordance with health department standards Closes the kitchen properly, opens kitchen properly, follows lists made and adds to them when necessary PAY FOR COOKS WITH EXPERIENCE: Cooks with experience and who excel in the Stage can expect to make $27-$29/hr ($20/hr starting pay + tips, which range from $7-9/hr).
