Good knife skills, the ability to break down primal meats, fresh seafood, proficiency on grill and sauté, and an overall understanding of proper food presentation are preferred skillsets. Hourly wage is dependent on experience level, $16 to $18/hour which is supplemented by a substantial tip share program that averages an additional $6 per hour.
