Seeking an experienced, team-oriented sushi chef to fill our #2 spot as our head chef's assistant Moshi Moshi is a busy Japanese restaurant offering the best sushi in the heart of historic Ballard. We are looking for an experienced sushi chef to work directly under our Head Sushi Chef to help run our sushi bar. You will be responsible for ensuring all practices and standards set by our Head Sushi Chef are followed, as well as performing prep and service responsibilities yourself. Responsibilities Prepare and present a variety of sushi dishes, ensuring high quality and presentation standards Collaborate with the culinary team to develop new menu items and seasonal offerings Maintain cleanliness and organization in the sushi bar and kitchen, adhering to food safety standards Ensure all ingredients are fresh and properly stored to maintain quality Participate in training new staff on sushi preparation techniques and kitchen operations Create a communicative, professional, and respectful relationship with the Head Sushi Chef, Owners, and team Work in tandem with the Head Sushi Chef to develop new dishes, promote professional development in the rest of the team, ensure all sanitation and food preparation procedures are followed correct, and perform administrative tasks as needed (inventory, ordering, etc.) Ensure that all deliveries are received in correct unit count and condition Lead by example to ensure that the team is continually striving to be better, yourself included Providing support to all team members and filling in wherever is necessary Required Qualifications Minimum 5 years working experience in a sushi chef role or comparable position Extensive knowledge of cleaning, preparing, and serving sushi and other Japanese cuisine (nigiri, sashimi, maki, etc.) Strong communication skills, including fluent English (written and spoken) Be able to work in a standing position for long periods Be able to reach, lift, stretch, bend, stoop, and carry up to 50 pounds Excellent knife skills, familiarity with kitchen equipment, and strong knowledge of Japanese cuisine Proficient with common technology, including Microsoft Office, web browsers, and point-of-sale systems Recommended Qualifications Prior experience in a supervisory position as a sushi chef Familiarity with Spanish and/or Japanese (spoken) Compensation We offer competitive pay with a base hourly rate of $23-$30/hour (depending on experience) plus tips from our tip pool (which average between $6 - $8/hr additional) for a total pay structure of $29-$38/hour. This is a full-time position requiring approximately 40 hours per week. Evening and weekend availability required.
