Chef de Cuisine – Michelin Recognized Restaurant We are searching for a Chef de Cuisine (CDC) at Allora our modern Italian fine dining restaurant in Sacramento www.allorasacramento.com . Our company is expanding this fall with the highly anticipated opening of Aiona our new Mediterranean live fire concept. This growth creates an amazing opportunity for a talented chef to join our Michelin recognized culinary team led by Chef Deneb Williams. We have a progressive restaurant culture that values the equitable treatment of our staff, teamwork and personal growth. We have extensive depth in our culinary ranks so no one chef is left to carry the burden alone allowing for a quality of life rarely seen in the hospitality industry. We are looking for a chef who will add their unique talents to our own and join us in the pursuit of creative excellence at Allora. Duties include but are not limited to: Culinary Development –The CDC will collaborate with the chef/owner and (EC) to produce an Cal-Ital inspired multi course dining experience at Allora. They will focus on a hyper seasonal “farm to fork” cuisine showcasing technique, single thread sourcing and visually stunning “Michelin worthy” plate presentations. Culinary Operations – The CDC will produce build sheet, recipes, and menu descriptions for every new menu item. They will set the standard for quality in every step of food production and be an integral part of an inspired culinary program. Leadership skills – The CDC will exhibit a management style that exemplifies teamwork and sets a positive example for the staff in all aspects of restaurant work. Promoting a culture of communication, respect and equity are a top priority for our company. Human Resources – The CDC will work alongside the EC to manage the kitchen staff. They will manage with progressive discipline, utilizing records of conversation (ROC) and Write ups (W/U) to clearly define expectations with the staff. Property Management – The CDC will set a high standard for a clean and organized restaurant. They will manage, inspect and enforces a strict cleaning program for the kitchen, storage areas and overall facility. All maintenance issues will be Ordering – The CDC will focus on procuring the highest quality products with an emphasis on financial responsibly. A strong focus on seasonal sourcing utilizing local farms and Italian producers. Inventory – The CDC will participate in all BOH inventories taken on the 1st of each month. They will inspect and ensure that all inventory items are properly organized and rotated while maintaining a food COG of 22%. Mitigation of Liability– The CDC will always protect the company from any potentially damaging events, actions or potential liability. They will maintain strict confidence of our financial information and always protect the trust of our management inner circle. Applicants must have 5+ years prior management experience in a Michelin caliber restaurant, hotel or resort setting. Attention to detail and customer service are a must with an emphasis on hospitality. Computer literacy is a must. Applicant must possess the ability to work in a fast-paced environment. Applicant will be required to perform all duties necessary for restaurant operations as assigned by their direct supervisor. Applicant will be required to take the Servsafe Manager Training course upon hire and/or upon expiration of their current, valid, state certified certificate. The above is not an all-inclusive job description. Standard Work Schedule – 10+ Hours per day, 5 days per week. There may be times when additional work hours and or days are required. Compensation Salary $90,000-$105,000 per year DOE Health Insurance Travel & moving allowance negotiable Additional 10% Annual bonus with 22% food COG and 12% BOH hourly labor attained. Two weeks (10 days) annual paid vacation years 1-5 Three weeks (15 days) annual paid vacation years 5+ Vacation may be approved in increments of 10 working days at any given time. Vacation time is accrued at 3.08 hours per pay period for years 1-5, 4.62 hours per pay period for years 5+ Annual performance reviews with salary increases subject to employee’s performance and overall profitability of the business. We are a busy cafe located in the Kearny Mesa area(right off the 52 freeway) with a reputation for excellent food and drinks. We are open for breakfast and lunch Monday through Friday from 7 am to 3 p.m. Higher Grounds has 2 locations and corporate catering services. Our catering business has recently expanded, increasing our daily lunches. The cook need to have experience in prep, breakfast, hotline and coldline. Our fast-paced model allows us to be ready for a busy lunch, having all items to be made within 5 minutes. Our food is fresh with a chef-driven seasonal menu that changes frequently. We also run a daily house-made soup, lunch special, and latte and matcha special. Doing this keeps our menu exciting for the customers and staff, always seeing and learning new things.
