Description

Job description: Quik Dog is hiring a Sous Chef to join our opening team at our flagship location at Mission Rock. The primary responsibility of the Sous Chef is to maintain the restaurant on a day-to-day basis while working station shifts in service, as well as some prep shifts. Leadership is displayed through ongoing participation in menu development, training of line cooks and prep teams, and leading by example during service in the absence of, and in tandem with, the Executive Chef. The Sous Chef should be trained in expediting service and do so in times of needed coverage. Key Responsibilities include, but are not limited to: - Work a weekly schedule of five shifts, predominantly on service stations, and occasionally expediting. - Report directly to the Executive Chef. - Help control food costs by placing daily cost-effective produce orders and specialty orders when assigned. - Help control operating costs by encouraging line cook efficiency with end-of-night closing procedures. - Maintain ongoing knowledge of each kitchen station and the ability to work every station. - Work a combination of line station shifts, mid shifts, and the occasional expo shift. - Cook on any line position when necessary. - Ensure upkeep of kitchen equipment through organization and cleanliness. - Assist in training, coaching, and leading BOH employees in a way that reinforces our cultural values and maintains food quality standards. - Prevent interpersonal conflict within the BOH team. - Attend period-end financial meetings. - Attend weekly menu meetings with kitchen managers whenever possible. Daily Requirements: Mid Shift - Check in with AM team and assist with prep if needed. - Maintain safety, health, and quality standards throughout the day, including checking for accuracy in recipe execution. - Act as communication bridge between AM crew, PM line cooks, and all kitchen managers. - Maintain kitchen cleanliness by working directly with porters. - Have eyes on produce and dry goods inventory to help chefs make educated purchasing, menu, and family meal decisions. - Share knowledge with all BOH staff to insure constant training. - Ensure that all kitchen equipment, food, supplies, and prep are stored properly throughout the day and especially at closing. Daily Requirements: PM Shift - Assist with produce and seafood orders. - Handle prep and production of station responsibilities when scheduled. - Ensure cooks and PM porters stay on task and maintain safety, health, and quality standards. - Confirm all dishes are prepared to specification and served at the correct quality, portion size, and temperature. - Double-check and taste each station’s mise en place for accuracy and quality. - Maintain kitchen cleanliness by working directly with porters. - Manage organization and cleanliness of service walk-ins and under-counter refrigeration. - Troubleshoot kitchen equipment malfunctions and report to the chef. - Ensure all kitchen equipment, food, supplies, and prep are stored properly throughout the day and at closing. Required Skills: - Ability to communicate effectively with staff, vendors, management, and guests. - Willingness to go above and beyond the job description when challenges arise. - Ability to educate staff on product knowledge, cooking technique, and sourcing. - Ability to follow established restaurant systems. - Personable and approachable presence. - Working knowledge of Google Sheets/Docs and Toast. - Ability to maintain and reference a running daily P&L. Supervisory Responsibilities: This position assists and participates, independently and as directed and guided by the Café Manager, in interviewing, hiring and training employees; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems Education/Experience: High school diploma or general education degree (GED), and at least one-year supervisory experience in a high-volume café environment is required.
