JOB PURPOSE: Prep cooks are responsible for receiving, checking the quality of, washing, cutting and preparing the produce and food goods in accordance with Din Tai Fung’s procedures. Prep cooks must familiarize themselves with the standard cutting size of all vegetables and take care and attention to wash vegetables thoroughly. Dumpling chefs (Dumpling Prep Cooks) are responsible for preparing, assembling, closing and steaming the dumplings for the guests. Dumpling chefs work from a show kitchen and thus must maintain a clean, groomed and professional appearance.
