About the Role: Line Cooks (Wok) are responsible for preparing, cooking and plating all the wok line items. Job Responsibilities & Tasks: Learns all Wok recipes, cook times, and cooking techniques per Din Tai Fung’s procedures Checks the ingredient quality prior to beginning cooking Cooks the ingredients in accordance with Din Tai Fung’s recipes Plates the final product in accordance with Din Tai Fung’s plating guidelines Prepares and cuts garnishes for Wok line items Labels all items in accordance with Health Department regulations and Din Tai Fung procedures Attends monthly staff meetings and Wok meetings Supporting Functions: Keeps all kitchen areas clean and sanitized Organizes items within the walk-in coolers and freezers Lifts/moves boxes, bags, chairs, and tables (up to 50 pounds) Assists with regular deep cleaning of the kitchen Maintains confidentiality regarding all propriety information, including but not limited to recipes and Standard Operating Procedures (“SOP’s“).
