Executive Chef – Immersive Japanese Supper Club We’re an immersive Japanese Supper Club like no other—fusing upscale cuisine, nightlife energy, and live performances into one unforgettable experience. Operating Thursday through Saturday nights, with additional days dedicated to kitchen leadership and menu development, this is a stage where culinary artistry shines alongside dancers, DJs, and surprise acts. We’re seeking an Executive Chef with the skill, creativity, and leadership to take our culinary program to the next level. This is not just about cooking—it’s about turning food into part of the show. The Experience Our concept blurs the line between fine dining and nightlife. Guests enjoy a Japanese-inspired menu centered on signature sushi and small plates, interactive presentations, and bold, avant-garde creations designed to complement a multi-sensory experience of music, performance, and movement. About the Role: As a Mixologist, you’ll work alongside a passionate team to deliver exceptional guest experiences. This position requires in-depth knowledge of classic and modern cocktails, proper technique, and a confident, warm presence behind the bar. You’ll be trusted with batching, prepping, garnishing, and serving elevated cocktails consistently—every time. About the Role: As the face behind the bar, you’ll execute a well-developed seasonal cocktail list, incorporating clarified cocktails, fat-washed spirits, amaro-forward drinks, and signature riffs on the classics. You’ll work closely with management to ensure that every cocktail served meets the highest level of quality, consistency, and presentation. What You’ll Do: Cocktail Execution Prepare cocktails from a fixed menu using advanced techniques: fat-washing, infusions, clarification, batching, etc. Follow recipes and prep guides with zero deviation to ensure consistency Garnish and present drinks beautifully, with attention to detail Stock, prep, and clean bar areas before, during, and after service Guest Experience Engage warmly and professionally with guests Educate and guide guests through the cocktail list with enthusiasm and knowledge Provide attentive, thoughtful service in both low and high-volume settings Teamwork & Professionalism Work collaboratively with the bar and floor staff to ensure smooth service Maintain sanitation standards, adhere to health codes, and uphold the bar’s reputation Qualifications: 5+ years of experience in craft cocktail programs or upscale bar environments Mastery of cocktail fundamentals and strong product knowledge Ability to handle high-volume service without sacrificing quality Strong organizational skills and a clean, efficient working style Confidence using bar tools (jiggers, strainers, ISI whippers, etc.) Familiarity with batching, prep, and station setup Preferred, But Not Required: Experience with amaro-forward programs or Italian spirits Understanding of low-ABV trends, digestifs, and after-dinner cocktails Familiarity with wines, spirits, and simple bar pairings NYC Food Handler’s Certificate / TIPS Certification Eighty Seven Next Door is a space for creativity, conversation, and community.
