Sushi Chef — Cherry Fish (San Diego, CA) Status: Hourly, Non-Exempt Schedule: Evenings, weekends, holidays as needed Compensation: $20/hour (DOE) + eligible for tip pool per house policy Reports to: Executive Chef / Chef de Cuisine About Cherry Fish Cherry Fish is an Asian-leaning, modern-luxe restaurant with an emphasis on sushi and locally caught seafood—elevated yet welcoming. Our Core Values Uncompromising Quality — No Shortcuts Exceptional Guest Service — Guests Feel Relaxed and Alive Team Trust & Collaboration — Clear Communication, Shared Goals Ethical Standards Always — Zero Tolerance for Harassment or Unethical Practices Role Summary The Sushi Chef prepares top-quality nigiri, sashimi, and maki; handles fish butchery with precision; and maintains the highest food safety, cleanliness, and product-consistency standards while working in a fast, guest-facing environment. Key Responsibilities Execute daily sushi prep: rice cooking/seasoning, fish fabrication, portioning, sauces, garnishes, and station mise en place. Prepare and plate nigiri, sashimi, maki, specialty rolls, and omakase items to spec and speed. Uphold strict product-quality controls (freshness checks, rotation, proper storage/labeling, FIFO). Break down whole fish and specialty seafood to maximize yield and texture; trim and store per SOP. Maintain an immaculate sushi station: sanitation logs, knife care, tool organization, allergen controls. Communicate 86s, par needs, and quality issues quickly to leadership; assist with order guides and inventory. Collaborate with BOH/FOH for smooth service; engage guests courteously at the sushi bar when applicable. Follow all food-safety and HACCP protocols; comply with local health regulations and internal audits. Support menu R&D and seasonal features consistent with Cherry Fish standards and brand. Qualifications 2+ years professional sushi experience (high-volume or omakase a plus). Skilled in rice preparation, fish fabrication, knife work, and traditional/modern sushi techniques. Strong understanding of product quality, seasonal seafood, and safe raw-fish handling. Excellent pace, organization, and consistency under pressure. Clear, respectful communication and teamwork mindset aligned with our core values. Current Food Handler’s Card; ServeSafe or equivalent preferred. Ability to stand for long periods and lift up to 40 lbs. Success Looks Like Consistent cuts, temperature, and seasoning across every service. Zero food-safety misses; spotless station and logs. The job starts early A.M. and lifting is required.
