This role is primarily focused on high-quality production of cured, smoked, cooked, and fresh meat products, including house-made sausages, charcuterie, and poultry breakdowns. In addition to back-of-house responsibilities, this role will also support front-of-house retail operations, engaging with customers at the butcher counter and assisting with daily service when needed. This is a hands-on, production-forward position suited for a cook or butcher who is passionate about craft, consistency, and team collaboration. We sell fresh cuts, house-made sausages, and prepared items directly to our community, with a focus on quality, transparency, and customer care. Key Responsibilities Production & Fabrication Execute daily production of cured meats, smoked items, and fresh sausages according to WINNER recipes and standards. Break down whole poultry, including chickens, ducks, and turkeys, efficiently and cleanly. Assist with trimming, portioning, and packaging proteins for retail and wholesale. Maintain clear, detailed batch records and product logs. Support R&D and recipe development for seasonal and special items. Butcher Counter & Customer Service Work occasional shifts on the butcher counter, assisting with retail sales, slicing, and portioning to order. Provide exceptional product knowledge and guidance to customers. Maintain a clean and well-stocked butcher case and retail area. Sanitation & Compliance Ensure all production workspaces, tools, and storage areas are kept in clean, sanitary condition. Follow all food safety and Agriculture & Markets guidelines Participate in deep-cleaning protocols and weekly sanitation checklists. Collaboration Communicate clearly with the butcher team, GM, and kitchen staff to manage shared resources. Participate in interdepartmental coordination, including product transfers and catering orders. Requirements Minimum 2 years of experience in a culinary setting or professional butcher shop, production facility, or meat department. Understanding of meat curing, smoking, sausage production, and poultry butchery. Comfortable working with knives, saws, grinders, and other butchery equipment. Attention to detail, consistency, and ability to follow recipes precisely. Ability to lift up to 60 lbs and work on your feet for extended periods. Availability for early mornings, weekends, and some holidays. Strong communication skills and willingness to help customers when needed.
