Key Responsibilities Station Responsibilities: Each Line Cook is in charge of a particular area or station in the kitchen. ey are responsible for preparing and cooking dishes specific to their station. Food Preparation: Line Cooks are responsible for all aspects of food preparation for their station, including ingredient selection, cutting, chopping, marinating, seasoning, and cooking. ey must ensure that all dishes leaving their station meet the restaurant's quality and presentation standards. Coordination: Each Line Cook ensures that all dishes are prepared and served in a timely and coordinated manner. Training and Supervision: Line Cooks may be responsible for training and supervising junior cooks and apprentices working on their station. ey must ensure that their team members follow proper techniques and maintain cleanliness and food safety standards. Menu Development: Line Cooks may contribute to the development of new dishes and menu items for their section. Quality Control: Line Cooks are expected to have a deep understanding of the lavor profiles and cooking techniques associated with their station. ey should be able to taste and adjust dishes as needed to maintain consistency and quality. Organization: Excellent organizational skills are essential for Line Cooks, as they must manage multiple tasks simultaneously and ensure that their station runs smoothly during busy service periods. Enjoy Mountain Life! Qualifications: Culinary School, Training, Experience: A culinary school or a vocational culinary program is not required but is a plus. Two to three years of station/section cooking experience in a professional kitchen is required. Food Safety and Hygiene Certification: Line Cooks must have a food safety certification, such as ServSafe or a similar accreditation. is certification demonstrates your understanding of safe food handling practices, which is crucial in a kitchen environment. Cooking Skills: Line Cooks should have a solid foundation in cooking techniques, including knife skills, saute ing, grilling, roasting, and frying. Practical experience and practice in the kitchen is essential. Knowledge of Ingredients: Familiarity with various ingredients, including proteins, vegetables, grains, herbs, and spices, is crucial. Understanding ingredient quality, lavor profiles, and how to properly handle and store ingredients is important. Kitchen Equipment Proficiency: Line Cooks need to be comfortable using various kitchen appliances and equipment, such as ovens, stovetops, grills, fryers, and knives.
