Prepare and plate nigiri, sashimi, maki, specialty rolls, and omakase items to spec and speed. Uphold strict product-quality controls (freshness checks, rotation, proper storage/labeling, FIFO). Break down whole fish and specialty seafood to maximize yield and texture; trim and store per SOP. Maintain an immaculate sushi station: sanitation logs, knife care, tool organization, allergen controls. Communicate 86s, par needs, and quality issues quickly to leadership; assist with order guides and inventory. Collaborate with BOH/FOH for smooth service; engage guests courteously at the sushi bar when applicable. Follow all food-safety and HACCP protocols; comply with local health regulations and internal audits. Support menu R&D and seasonal features consistent with Cherry Fish standards and brand. Qualifications 2+ years professional sushi experience (high-volume or omakase a plus). Skilled in rice preparation, fish fabrication, knife work, and traditional/modern sushi techniques. Strong understanding of product quality, seasonal seafood, and safe raw-fish handling. Excellent pace, organization, and consistency under pressure. Clear, respectful communication and teamwork mindset aligned with our core values. Current Food Handler’s Card; ServeSafe or equivalent preferred.
