Responsibilities: Direct and maintain our culinary vision for our Mexican concept, Pequeña by Polly's Oversee the entire kitchen operations, including food preparation, cooking, and plate presentation Uphold the highest standards of food safety, food handling, and sanitation requirements to ensure the health and safety of staff and guests Manage kitchen inventory and ordering Manage labor and kitchen waste efficiently to maintain the highest-level of standards, food quality, and COGS Collaborate with ownership to meet and/or exceed sales and budget targets Ensure consistent execution of company policies Requirements: Must have Mexican food cooking experience At least 2 years of experience in restaurant management, and comfortability with ambiguity Strong leadership, communication, interpersonal skills and team-building skills Desire to operationally support the business as an individual contributor and leader Experience managing P&L's, labor, purchasing, vendors and quality control while providing results in revenue Knowledge of NY state health and safety regulations and compliance requirements.
