Description of the Role The Porter is a key member of the back-of-house team, responsible for ensuring that all sanitation procedures are met and followed in compliance with food safety regulations. Adhere to the First In, First Out (FIFO) rule, ensuring all ingredients are appropriately labeled and dated. Ensure proper waste disposal and recycling procedures are followed. Food Prep & Support Assist in the preparation of assigned ingredients, sauces, soups, sandwiches, and other prepared foods. Support kitchen staff with basic food prep tasks such as portioning and packaging ingredients. Work independently on food prep and specifically the sandwich production line for wholesale order fulfillment needs, unsupervised and during downtime hours of the day. Follow detailed recipe and process documentation (outlined in standard operating procedures) with precision and consistency. Assemble packaging, stage prep work, and ready shipments for 3PL pickup. Maintain strict adherence to health and hygiene standards mandated by both the Department of Health (DOH) and the USDA. Keep an organized and sanitary workstation. Inventory & Equipment Handling Maintain strict inventory of cleaning supplies and notify management when restocking is needed. Ensure all equipment is properly cleaned and stored after use. Independently close the kitchen, following standard operating procedures (SOPs) for cleanliness and security. Job Requirements Ability to lift and carry up to 50 lbs. Comfortable working in a physically demanding environment, including standing for extended periods (up to 10 hours per shift, 40 hours per week).
